Quinoa and Avocado salad

  • Soak the quinoa for 1hr and boil it till soft cooked. Drain the excess water and refrigerate the quinoa.
  • Mix chopped olives, olive oil, lime juice salt and pepper to make the dressing.
  • Peel the ripe avocado, remove the stone and cut into small dices.
  • Mix the dressing with boiled quinoa and adjust seasoning.
  • Mould the quinoa mixture and arrange the avocado, and garnish with orange segments, feta cheese, cherry tomatoes, mustard cress, chives, lettuce and walnuts.

Ingredients:

  • Quinoa - 100 gms                           
  • Avocado - 1 no                          
  • Cherry Tomato - 20 gms                
  • Olives - 50 gms                             
  • Lime juice - 10 ml                      
  • Walnut - 40 gms                          
  • Orange - 1 no.                          
  • Olive oil - 25 ml                          
  • Feta cheese - 20 gms                    
  • Mustard cress - 5 gms
  • Chives - 5 gms
  • Sesame seeds - 2 gms
  • Radicchio - 20 gms
  • Lolloroso - 20 gms
  • Salt and pepper to taste
