Gondhoraj Hinted Grill Fish

  • The fillet of fish is washed thoroughly and pat dried to soak out any excess moisture.
  • The fish is marinated with chopped garlic, salt, pepper, kaffir lime juice & parsley.
  • Sprinkle a little flour and grill the fish in a hot plate.
  • Once the outer surface is sealed cover it with silver foil and put it in an oven for 5-7 minutes.
  • Sauté onion, garlic, leek & celery in butter.
  • Add the fish stock as per desired consistency of the sauce.
  • Finish the sauce with a knob of butter, a dash of cream and finely chopped parsley.
  • Prepare an olive-Mash, with boiled and mashed potatoes folding it with chopped olives and finish with butter & cream.
  • Take out the fish from the oven, place it on the olive mash, as shown in the picture.
  • Drizzle little olive oil and pour the sauce on top.
  • Garnish as shown.
