Soup Cooking Process
- Sear the onion slice charred (black) on a hot pan.
- In a large pot add cold water. Now, add chicken and vegetables and boil them.
- Simmer for 4-5 hours.
- After this, strain everything.
Chicken Consomme Cooking Process
- Cut the chicken into 6 pcs (thigh, breast, drumstick with bones).
- Now, cut the vegetables into small pieces and mix them with the chicken. To this add salt, black pepper, herbs, garlic, olive oil, butter, white wine and chicken stock.
- Now, roast the chicken in the oven for 35 minutes to let the skin of chicken get a nice colour.
- Finally, remove the bone and mince the meat with parmesan cheese, nutmeg and egg.
