Avvolto Avocado

  • Peel and deseed the avocados; thinly slice one and mash the other.
  • To the mashed avocados, add gherkins, onions, parsley and season.
  • Blend jalapenos into mayonnaise.
  • Make a thin tempura batter and fry.
  • Assemble the dish by inserting the mash in the rolled avocados and plate.
  • Garnish with microgreens and tempura crisps.

  • Gherkin - 7 gm
  • Onion - 10 gm
  • Parsley - 5 gm
  • Tempura Flour - 10 gm
  • Oil - For Frying
  • Salt - 3 gm
  • Pepper - 1 gm
  • Jalapeno - 5 gm
  • Mayonnaise - 15 gm
