- Peel and deseed the avocados; thinly slice one and mash the other.
- To the mashed avocados, add gherkins, onions, parsley and season.
- Blend jalapenos into mayonnaise.
- Make a thin tempura batter and fry.
- Assemble the dish by inserting the mash in the rolled avocados and plate.
- Garnish with microgreens and tempura crisps.
